You are <b>required</b> to try and upsell the customer. You'll lose your job, or at minimum, be moved back to the grill if you don't upsell every single customer.<br /><br />As for Europe, I've only been there a handful of times, but I always found the service superior to the US. Especially in Italy, and even (mostly) in Paris. The service was ...WalMart used to be the ant-KMart. The service was very good, the shelves were filled and the prices actually were better than elsewhere. That was about 20-25 years ago. In the meantime, their sales and profits have dropped and screwing shoppers, workers, and suppliers has been their business model along with relying on check cashing and wire transfer fees for profits. It wasn't a great paying job but it probably used to be a lot less awful.<br /><br />McArdle is probably one of those lucky ducks who got through high school and college without working in some area of retail or food service. Admittedly I've only traveled there a few times for work, but the service has always been about the same in my experience as in the US. <br /><br />I've heard horror stories about the service in Europe being awful, but universally these stories come from people who I know are assholes. I suspect that in Europe if you act like an asshole the service staff will ignore you more than in the US where the service staff is to a large degree dependent on tips.
